My Night In

Travis is at a conference this weekend, so I have had a relaxing night in! Last night, I went out to dinner with some girlfriends, so I decided to stay in tonight. 

The first part of my night was consumed with pjs, reading, and Pandora’s love song radio. 

Before I Fall is a book I noticed a lot of my eighth graders reading so I decided to give it a try. It’s really good so far! It’s about a girl who relives her last day alive 7 times. Very Groundhogs Day.

I got hungry, so I decided to make a snack. Travis and I are currently doing a cleanse, so I was looking for a healthy snack. I decided to make some roasted chickpeas. They turned out really good! I was inspired by my mom’s chex mix. Here’s what I did:

Rinse and dry a can of chickpeas. 

Roast at 375 for 45 minutes, or until they are brown and crunchy (if they are still soft in the middle, let them keep roasting). 

Put them in a small bowl. Put about 1 tbsp of olive oil on them and stir well, while they are still warm.

Then put around 1/2 tbsp of worchester sauce and stir well. Then add 1/4-1/2 tsp each of garlic powder and onion powder. I just gave both seasonings a good shake over the bowl. Then add some season salt, to taste. 

And the finished product! Yum!

I have made these before with a honey-cinnamon coating on them. Very good, and best served warm.

Now I think I will watch The Fault in Our Stars and snack! I loved the book,  I hope the movie is just as good. 


Valentine’s Day present 2015


Travis and I like to buy things for the house on holidays instead of only buying things for each other. This year for Valentines Day, we got new curtains.

I was hesitant to get curtains for a long time because I really like the view out of our back window. So, we ended up getting curtains that are slightly sheer.


Now, we can still enjoy the view without getting sun in our eyes!


We decided on lace drapery on the side windows to help with some privacy. Travis has been wanting curtains for a while because our neighbors can see right into our house.


Now we can watch our google fiber in privacy! Which by the way, we LOVE having google fiber. (Upcoming post!)


Valentine’s Day 2015


Travis and I had a great Valentine’s Day. Actually, Travis prepared a wonderful Valentine’s week for me! He gave me a different heart shaped candy every day of the week.

Monday was a Russell Stover’s strawberry cream heart.


On Tuesday, he left he notes on my car in the morning. Super cute!



Once I got home, he gave me a small heart with three different candies in it.


Travis left me my candy on my car seat on Wednesday. It worked out perfectly because I had a leadership meeting right after school and then straight to volleyball in St. Joe, so having a chocolate snack during the day was necessary!


On Thursday, Travis got me a slightly bigger candy heart that had six pieces in it. And of course, I forgot to take a picture.

On Friday, Travis got me a Ferrero collection heart, Yum! He also got me a bunch of white board markers. We decided to celebrate on Friday night instead of Saturday partly to avoid the crowds, but mostly because we forgot to make a reservation. We went to Em Chamas Brazilian Grill.


Saturday, Valentine’s Day, Travis got me the best heart of all, Dove chocolate! It has dark chocolate truffles, chocolate covered caramels, and peanut butter truffles, the best three types of candies! He also got me my favorite bottle of wine.



We went out to breakfast at The a Big Biscuit, shopped for curtains, and made homemade deep dish pizza. Last year, we bought a ceiling fan for Valentine’s Day, and this year, we got curtains! Gotta love home improvements.

Breakfast Date

Today, I am observing another teacher in the morning and Travis has professional development in the afternoon. So, we each decided to take the other part of the day off as a personal day! It’s the first personal day I have taken all year.

Since Travis took the morning off and I didn’t need to be at school quite so early, we decided to go out for a breakfast date to our favorite breakfast spot, Corner Cafe in Riverside! It was still an early morning, we got up around 5:00 and got to Corner Cafe at 6:00. We go there all the time on the weekends, but this was the first weekday morning we have gone. It had a very different feel than it does on the weekends; I’m pretty sure I was the only girl in the whole restaurant. So many cute old guys getting their morning cup of joe. It’s normally PACKED on the weekends.

I started with coffee. They have some of my favorite coffee.


My date is the best!


They have the best biscuits and gravy! That’s what I normally get. Travis got it this morning. The gravy is so creamy and the biscuits hold up to the gravy really well. A lot of places have biscuits that dissolve into the gravy.


I decided to get an omelet with cheese and bacon, with hash browns and toast. I never finish the whole omelet, I have over half of it in my frig along with some hash browns (Saturday morning breakfast, and I don’t have to go out to get it!)


I know it’s just toast, but they have the best toast! Honestly, how do they make toast taste better than the toast I make? Apple butter is definitely my favorite toast spread.


Corner Cafe has some of the neatest decorations. My favorite is the motorcycle!


If you are a first timer to Corner Cafe, you must get a cinnamon roll! They are huge and warm and covered in the most delicious icing! They don’t put the icing on until right before they give it to you. Yum!


After that I dropped Travis off at home and kissed my cuddle bugs goodbye!


Now that I have finished my observation, time to cuddle with Uno, watch some TV and read! Happy personal day to me 😜
